FREQUENTLY ASKED QUESTIONS

1. WHAT IS ACKEE AND SALTFISH
Ackee is Jamaican fruit with spongy white or yellow flesh and saltfish is simply that--salted, dried fish, usually cod, though other fish (such as mackerel) can be used.

2. WHAT ARE PLANTAINS
They look like very large bananas. They should always be eaten cooked. Unripe plantains are green and very firm. As they ripen they turn a yellow orange colour, much more orange than a regular banana. Then they turn black and become very soft, even mushy. They can be cooked in any stage of ripeness, including complete black. The darker the skin colour, the sweeter the taste.

3. WHAT IS JERK CHICKEN
Jerk is a Jamaican seasoning preparation in which meats and poultry are marinated in herbs and spices then cooked.

4. WHAT IS CALLALOO
A leafy green vegetable, steamed and often served with saltfish (similar to spinach).

5. SPECIAL DIETARY CONCERNS
We will do our best to accommodate any special dietary request. During your visit please ask to speak with a member of staff and we will be happy to prepare a delicious entrée that meets your individual needs.
